Remember those salmon patties your mom used to make? Well, forget those! These are REALLY delicious! The trick is getting them not to fall apart when you fry them so make sure you have enough bread crumbs and eggs to hold them together. The Remoulade Sauce with Horseradish recipe is on this site with the Fried Oysters and it is terrific with these salmon patties. In fact, the third day that sauce was in my frig, I dipped steamed asparagus in it and it was STILL delicious. If you are thinking about turning your nose up at canned salmon, give these a try – they will surprise you.

Remember to always heat up your skillet first. Then swirl in the olive oil. And when it is hot and glistening, then add the salmon patties.
Mix drained salmon with other ingredients. Add more bread crumbs or more oil from the canned salmon to get a consistency that will hold together.
Form patties and fry them in a little olive oil in a medium hot skillet.
I moved the patties onto a platter and slid them into a 350 oven for a few minutes to keep them warm. Serve with lemon wedges and Remoulade Sauce with Horseradish.
