MAURICE’S SALAD

This is a salad that originated at the Higbee’s Department store in Cleveland, Ohio.  That was back in the day when ladies got dressed up and went shopping all day and had lunch at the little cafe or restaurant in the store.  Remember?  Okay, well I barely remember that myself.  At any rate, Higbee’s got sold to Dillard’s in 1987 and that was that.  This is a delicious entree sized Chef’s style salad, not exactly what seriously skinny people might call diet food, but… hey… it’s a salad.  And, besides, I don’t really trust skinny people.

    Directions

    Wash and dry some iceberg and butter lettuces.

    Step 1

    Make the dressing: Combine, mayo, lemon juice, vinegar, sugar, mustards, parsley, one chopped egg, and onion. Salt and pepper to taste.

    Step 2

    Toss the salad with the dressing. Then add the reset of the components and serve.
