Greek Tycoon Potatoes

These roasted lemony potatoes with oregano will make you want to fly off to Mykonos.  I named them Tycoon Potatoes after my favorite Greek personality, Aristotle Socrates Onassis.  Yes, yes, I know that by the time he married Jackie, he was a little “oily” looking, but let’s face it, he had the attractive swagger of a very wealthy and confident man’s man.  Look at that Town and Country magazine cover from 1964.  He was a hunk when he was young.  Wikipedia says:

He amassed the world’s largest privately-owned shipping fleet and was one of the world’s richest and most famous men. He was married to Athina Mary Livanos, had a long-standing affair with opera singer Maria Callas, and was married to American former First Lady Jacqueline Kennedy.

 

These potatoes are so rich, lemony and indulgent!  They smell wonderful while they are cooking.  But don’t make the mistake of thinking you can “set it and forget it,” because you need to watch these as they roast at 400 degrees.  If they start drying out, add water or stock.  Give them a flip with a spatula every once and a while.  In the last 5 minutes or so, sprinkle just a very little bit of sugar over them and toss. This will enhance caramelization and browning.

    No need to be terribly precise about measurements in this recipe. Let your conscience be your guide! Pre-heat the oven to 400 degrees.

    Step 1

    Slice the Yukon potatoes into wedges and spread them in a large casserole dish.

    Step 2

    Mix the sauce ingredients together and pour the sauce over the potatoes. The sauce ingredients are all the ingredients listed, except the potatoes and sugar. Don't add all the water at first -- just a little and you will add more as the potatoes roast and start to get dry. With your hands, coat each wedge in the sauce.

    Step 3

    Pour a little water in the casserole. Then put the dish in the oven. Every once and a while, check the potatoes and add water if they are getting too dry. Flip them with a spatula a few times so that they brown on all sides. Toward the very end, sprinkle just a little sugar over the top and that will enhance the browning. Serve with roasted chicken or a steak.
