This recipe was circulated among my mother’s friends at church. It’s not authentic chili – no hot chili peppers here and no chocolate or coffee. LOTS of beans. Sometimes this is called Sante Fe Soup but it’s so conveeenient and special that I prefer to call it Church Lady Chili.

Invest in a good can opener - really!! A good can opener is more sanitary and you are less likely to cut yourself on the sharp edge of an opened can.
Over medium high heat, in a big Dutch oven or pot, cook the beef and onions until the beef is browned and onions are soft. Drain excess oil if necessary. If you are using all chuck, you will have more excess oil than if you cook ground sirloin.
Add all of the other ingredients to the pot and STIR.
Bring to a low boil, then reduce heat and simmer for two hours, stirring frequently.
Conclusion
Serve with sour cream, grated cheese and chopped green onions. Now, isn't that SPECIAL????
