I didn’t feel good and the idea of cooking something made me slightly queasy! I found this recipe on The Woks of Life website. Well, I found “a” recipe for easy miso soup on their site. I ad-libbed a little and this is what I wound up with. Admittedly, I took as many shortcuts as possible. I DID NOT FEEL GOOD. But, this soup made me feel better. You can pour everything into the pot and go back to bed.
Ingredients
Miso Soup
Directions
If you really feel bad, order the ingredients from Instacart and stay in bed. You should have everything in your pantry except perhaps the tofu and scallions!
Into a big soup pot, pour the chicken stock and heat over medium heat.
Add the miso paste and dashi powder and stir. Keep over an even medium to medium low heat. Do not bring this to a hard boil. Let it come to a slightly bubbling simmer.
When the paste is incorporated, add everything except the egg. Let it simmer a few minutes.
In a small bowl, slightly beat the egg and then pour it into the soup. Actually, you should drizzle it in a circular motion into the gently simmering soup and then give it a stir.
Serve yourself in bed. Feel better!
