THIS DISH IS FOR ONE PERSON. Obviously, if you are cooking for more than one person, you can make more noodles and add more bok choy to the wok, but I made this for myself and it was delicious. You could also add more vegetables which would of course be Mr. Wong’s Noodles (on this site). But the bok choy alone made a terrific main course without a lot of chopping and mincing and fussing. The sauce is sweet and savory, packed with umami! You should mix the sauce first and taste it and then add a little soy sauce or a drop more sesame oil if necessary. Always be careful with sesame oil because it has a strong flavor and once you add it, you can’t remove it from your sauce. This is one of my favorite comfort go-to dishes. It’s fun to cook and it’s easy and addictive. AND YOU CAN ADD SHRIMP OR ANYTHING ELSE YOU WANT TO! And it was amazingly comforting with a glass of cold, crisp champagne.

BOK CHOY FOR STIR FRY
Directions
Do Ahead: Trim the bulbous white ends of the bok choy, rinse it, and give the vegetables a rough chop. Make the Sauce by mixing all ingredients and TASTING and TWEAKING to get a salty, sweet, nutty taste. Make the cornstarch slurry by mixing the cornstarch and the water with a fork, then set aside to add to your sauce at the end to make it thicken up.
Soak the noodles for about 10 minutes. Drain and rinse with cold water. Try to keep the noodles separated as much as possible.
Heat wok over high heat. Add oil and swirl. Let oil get really hot.
Fry the noodles. Flip on both sides as the noodles brown.
Add the trimmed bok choy. It will SIZZLE!
Stir fry the bok choy until it is tender.
Add the sauce.
Add the cornstarch slurry and let the sauce thicken, stirring constantly. This will go fast. Turn down the heat.
When the sauce is thick and bok choy is tender, serve!
