This is so simple it’s ridiculous. And yet it is soooo good. Puppy drum might be my favorite fish — it’s firm and flavorful and absorbs other flavors beautifully. Try the Fish Robert at Steak Knife on Harrison if you don’t believe me! This is a great week-night dish when you’re tired. It’s delicious and pretty to look at.


The lemon “supremes,” are the segments cut from the bitter white pith. Sprinkle some supremes over the fish and around it, and then lay some very thin cut slices of lemon on top of the fish. And if you feel like dancing like The Supremes, go ahead.

Baked Drum Provencal
Directions
Pat fish dry with paper towels.
Step 1
Lay fish in casserole dish. Season with dried spices. Pour in wine and water.
Step 2
Add butter and all other ingredients.
Step 3
Bake at 400 degrees for 20 to 25 minutes.
