This is just a really good way to make tuna salad.  The celery gives it a nice crunch, and the onion, boiled egg & dill pickle relish add so much flavor.  The grilled sandwich has that nice melty cheese on the inside and a crunchy brown exterior…  don’t turn your nose up at a good tuna melt!  Bunny Bread is nothing to be ashamed of, either.  On a weeknight with a splash of that wine from that bottle that is open in your frig (just a splash!), it’s perfect.  By the way, the picture is of a tuna salad sandwich.  On the second night, I made tuna “melt” grilled sandwiches, and they were eaten before pictures were made.  Sorry, not sorry.

    Directions

    Just use good quality tuna (Cento is my favorite). Make the tuna salad first and let it sit in the frig for a while.

    Step 1

    For the Tuna Salad: Drain the tuna, add chopped celery, chopped hard boiled egg, chopped onion, pickle relish and then enough mayo to make it spreadable. Use plenty of salt and pepper. Squeeze some lemon juice over the salad. Let it sit in the frig for a while.

    Step 2

    Spread softened butter on one side of two pieces of bread. The butter is on the "outside" of the sandwiches. Then slather a little mayo on one piece of bread. Add tuna salad, and top with a slice of American cheese. Make sandwiches.

    Step 3

    Melt butter in a skillet. Grill the sandwiches on a hot skillet, turning a few times until golden brown. Serve immediately.
