The secret here is to add the minced garlic during the latter part of roasting the potatoes. That way the garlic is not burned when the potatoes are done.

Directions
Preheat oven to 375 degrees.
Cut the potatoes into halves or quarters. Put them in a casserole dish.
Squeeze one large juicy lemon over the potatoes. Pour some olive oil over the potatoes. Stir or use your hands to coat the potatoes with the oil and lemon.
Roast the potatoes until they are getting soft and starting to brown. If they start to get too brown or if they stick to the casserole, add some water and stir.
Meanwhile mince the garlic and add to the casserole. Continue roasting until the potatoes are brown and soft on the inside. You can reduce the heat to 350 degrees for the last 15 minutes or so if the garlic is getting too dark.
