SMALL PRIME TENDERLOIN ON GAS GRILL

One of my favorite celebrity chefs is Alex Hitz.  He’s a native of Atlanta, Southern to his core and, if his cookbook confessions are credible, he’s got a lot of fancy friends.  He also sets a gorgeous table and smiles incessantly.  His cookbooks are especially fun because the recipes are do-able for big dinner parties and the pictures are inspiring.  As someone who considers Popeye’s fried chicken with champagne a meal fit for royalty, I have an affinity for his menus and pairings.  Check out his two cookbooks, and look at his recipe for beef tenderloin on page 235 of the first one, My Beverly Hills Kitchen (2012).  I wasn’t having a big dinner party when I decided I wanted to have prime filet and a Bearnaise sauce for dinner, so my recipe is scaled down to a solo meal.  But, it’s nice to know that when I do invite all my fancy friends over (and really, I do have some), I’ll know what to do thanks to Alex!

    Directions

    Prime beef on the grill. A nice glass of red wine. What else do you need to be happy?

    Step 1

    Coat the beef in olive oil (not too much) and then coat with Kosher salt and pepper.

    Step 2

    Heat gas grill along with the cast iron pan on the grill grates. Close the lid and get a steady 400 or so degrees.

    Step 3

    Put the tenderloin on the hot cast iron grill. Close lid. Cook 4 to 5 minutes, and then turn and cook another 4 minutes or so.

    Step 4

    Rest (not you, the steak). Slice. Plate. Nap with Bearnaise.
