Strictly speaking, white chili lacks tomatoes and red chili pepper. It should also contain white beans as opposed to red beans. Since I am not a very strict person (just ask Josephine and Zelda) I made this chili the way I wanted to: I used a combination of white and dark ground turkey (because I like the breasts and the thighs) along with red beans, kidney beans and black beans. Rather than mixing spices, I took a shortcut and bought a few packets of McCormick’s chili seasoning. Don’t knock those until you have tried them!

You may need a little oil in the bottom of the Dutch oven because there is so little fat in the ground turkey and it tends to stick when you start to brown it.
Step 1
In a Dutch oven over medium high heat, brown the turkey and crumble it up with your wooden spatula.
Step 2
Add the chopped onions and cook with the turkey until the onions are soft and translucent.
Step 3
Add the spices. I used half a packet of McCormick's white chili seasoning and half a packet of the regular chili seasoning. Cook the spices and stir for a few minutes.
Step 4
Add the liquids and the beans.
Step 5
Give the chili a good stir and let it come to a very low boil once, then lower heat and let it barely simmer for a few hours.
Step 6
Top with sour cream, cheese, cilantro and whatever else floats your boat. I like this with a glass of really cold milk.
