This recipe is on this site as “Lemongrass Grilled Pork Chops.” The best thing about this grilled pork chop bowl was last night’s addition of seasoned ground turkey left over from my lettuce cups the night before!  So, look at the recipe on this site for Thai Turkey Lettuce Cups and when you have leftovers make this dish! In fact, I preferred the sauce that goes with the lettuce cups recipe.  This is delicious and easy to make.  Don’t overcook that rice vermicelli!

A word about lemongrass:  It is a lemony gingery herb used frequently in Southeast Asian cooking.  It is very fibrous and stringy.  So, in this recipe I cut off the tough bulbous ends, then “bruised” the stalks with the side of my knife, then chopped them into two or three inch lengths.  Be sure to brush off any bits of lemongrass on the chops before grilling them.  Lemongrass has multiple health benefits.  It is an anti-oxidant and an anti-inflammatory.  It aids in digestion and helps to relieve menstrual cramps. It also smells amazing!
