GREEK LEMON CHICKEN THIGHS AND POTATOES

August 29, 2025.  Twenty years ago, Hurricane Katrina made landfall and changed everything.  I was lucky, having evacuated to Memphis with a friend and our dogs before the devastating storm hit.  I had resources and my home (albeit damaged) was not destroyed.  But so many others were not so lucky.  Images on the news of people stranded on their rooftops still shock and sadden.  On a rainy Friday night, I made this casserole while those 20 year old scenes re-played themselves on CNN.  I only stopped once to have a good cathartic cry.  Then I changed the channel and let the dogs inside.

By the way, this recipe is taken directly from Sip and Feast so check out that web site or the YouTube videos.  I added a sprig of rosemary to the marinade but that’s optional (you could add a sprig of oregano instead).  I have to say, I think the honey in the marinade is crucial.  And because the chicken and potatoes may not be cooked to perfection at the same time, check on the casserole while it is in the oven, give it a stir, rearrange things, adjust the temp and cooking time if necessary.  This is a great weekend night dish because you can slide the casserole in the oven and then go about your business which in my case means opening a nice bottle of Mersault and finding a brainless horror movie to half-watch.  Your house will smell fantastic while this cooks.

    Directions

    Before you cook, pre-heat the oven to 400 degrees. But you've got a two hour marinating time before you need to do that.

    Step 1

    Combine the ingredients for the marinade. Pour into a large plastic bag and add the chicken. Seal well and put in the frig for about 2 hours. Take the cold chicken out of the frig about 30 minutes before you start cooking.

    Step 2

    Pour the chicken and the marinade into the casserole. Nestle the potato wedges into the dish.

    Step 3

    Cook at 400 degrees for about an hour. Then adjust the oven temp if necessary and cook until the chicken is brown on top and the potatoes are tender. You may have to remove the chicken from the casserole and finish cooking the potatoes. Then you can re-assemble the dish when everything is cooked the way you like it.

    Step 4

    Serve with lots of good French bread to soak up the juices.
