I had a nice sized prime tenderloin steak for my dinner tonight. I made the mistake of leaving it on the counter while my poodle Josephine was in the house. When I caught her in the kitchen, she had already gulped down half the beef and was licking her lips. Luckily for me, she has a cast iron stomach. And I really didn’t feel like firing up the grill anyway. Plan B: Pretend I’m on CHOPPED and see what else I can do with Josephine’s leftovers!

HERE'S MY SKILLET TENDERLOIN WITH SMASHED POTATOES:
RECIPE: Boil yellow potatoes until very soft. Saute red onions and red bell peppers in olive oil & butter. Add potatoes and smash them. Add the chunks of tenderloin. Saute until medium rare or medium. Add lots of salt and pepper, a few shakes of Tabasco.
