Here are some random rules of cooking I have learned, either through trial and error, or from friends, cookbooks and YouTube!
1. Dry your proteins before dropping them into the skillet. 2. Trim the fat off your chicken or duck before cooking. 3. Don't wed yourself to a recipe. Every oven is different. Every chicken is different. 4. Own a thermometer for deep fat frying and a fire extinguisher just in case. 5. Cooking a duck breast: Score it, start in a cold pan then cook the skin side slowly. 6. Grilling steaks: Salt hours ahead of time or at the last minute... & salt generously. 7. Bearnaise sauce: Temper eggs with the hot vinegar reduction before whisking in. 8. Everything should be cold for biscuits. 9. Learn how to velvet proteins for the most amazing Chinese-American dishes. 10.Relax. Take your time. Enjoy the process & learn from your mistakes.
