These lobster tails came from LobsterAnywhere and they were delicious.  I ordered the XL size, stuffed them and cooked them at 415 degrees for 18 minutes.  You could serve these with Bearnaise sauce or a melted butter sauce and lemon wedges.  They make a perfect dinner party dish because you can prepare and stuff them ahead of time, then slide them into the pre-heated oven 20 minutes before serving time.  This chart for cooking times is on the LobsterAnywhere website.

THESE LOBSTER TAILS WERE SERVED AT THE FIRST ANNUAL CHAMPAGNE AND CAVIAR DINNER AT 1205 ARIS AVENUE, AND THEY EARNED ME A HOSTESS GIFT OF GRILL TOOLS FROM MR. AND MRS. NELSON.  KEEPING IN MIND THAT THE CHAMPAGNE WAS FLOWING, THE OCCASION CALLED FOR A TIARA AND ROYAL POSE.  THE LOBSTER TAILS AND THE PARTY WERE A GREAT SUCCESS.  GOOD FRIENDS WITH GOOD FOOD… WHAT COULD BE BETTER THAN THAT.

    Directions

    To "piggy back" the lobster tails: With scissors, make a cut down the top of the lobster shell to the tail, but leave the base of the lobster tail intact. Split the shell, then loosen the lobster meat and pull it up and out of the shell, letting it rest on top of the shell for cooking.

    Step 1

    Preheat oven to 415 degrees.

    Step 2

    Make the melted butter sauce: Roast a head of garlic while you melt a stick of butter. Squeeze at least five or six pods into the melted butter. Cool.

    Step 3

    Make the stuffing: Combine the crabmeat, mayo, mustard, seasonings and lemon zest.

    Step 4

    Slice a pocket down the center of the lobster tail and stuff/mound the crabmeat filling down the length of the lobster tail.

    Step 5

    Sprinkle with bread crumbs. Drizzle with the melted roasted-garlic butter.

    Step 6

    Put the lobster tails on a sheet pan and roast for 15 to 20 minutes at 415 degrees. The lobster should be about 140 degrees on the inside when done with no hint of translucence.
